How to enable SSH after install (with all configuration done) or otherwise enable HDMI

I chose defaults during installation, did not select SSH.

Also, defaults do not include hdmi_force_mode , so there is no HDMI output unless projector is on in the booting moment (this should really be on?)

So now I have a well configured and working LibreELEC, except.. how can I edit the config file, or install SSH?

Please consider making HDMI always output as default, booting without HDMI does not seem to make any sense for this distro.
