I would assume it's not possible but am I able to restore from one CPU type to another?? Using the LE backup and restore function. Will it work??

These are different types of CPUs. Different hardware. No software is gong to change that. I'd like to upgrade my i3 to a i7 while we're at it...

I've not had a lot of luck restoring to the same device.
Some skins like Titan allow their settings to be backed up. You can export/import libraries.

It worked perfectly. I backed up my S905X device and restored it to my S805 device without any issues at all.

Binary addons from S905 might not work on S805. They will work the other way round.

Usually the ones that ship with Kodi not the third party ones
