I think it's only for GUI sounds, and don't affects A/V playback.
I tried to put in 5.0 and the sound of the voice is cut, going back to 2.0 it come back, that's why I do not know how to configure it,

For DTS and/or AC3 only configuration you have to set 2.0 channels.

My soundbar supports DTS 5.1 and AC3 5.1, I still have 2.0?
AC3/DTS 5.1 is transported over 2.0 PCM channels.
So how can i have 5.1 ?
I have a soundbar compatible 5.1 AC3 / DTS, I wanted to know what was the best choice between optics and the ARC, I do not know if the TV can send them in passtrough, I think it the equipment must be compatible, and I see that the TV only reads the AC3 and not the DTS, I do not know if it has an impact on the passtrough

To just have 5.1 on a soundbar use TV (AC3) configuration from Audio quickstart guide - Official Kodi Wiki
You can check the configuration by downloading and playing the AC3 test file from TFM Group Software. It works if you hear the LFE test.
