Does it do any good to stop Kodi ('systemctl stop kodi') before restart or shutdown (via SSH)?
Or it doesn't really matter?

You mean Kodi stops before restart?
Yes it does but sometimes it makes sense to stop active services/programs in a controlled way before restart.

No, systemd does this for you. There is no need to do it manually.
