Does your PSU provide enough wattage? Does everything work on RPi OS? If both answers are positive...
I replaced the adapter by another one with almost the right voltage (4.8 V) but the problem remains the same.
And the logs are strange, their creation date is way before i installed the system. I post them anyway just in case.

You didn't followed the above instructions for providing a log file (incomplete, wrong log level, not on our server).
Also you didn't answered my questions, and voltage vs. wattage seems to be unknown.
Based on such incomplete information I can't help.

Original power supply is 5,1V, don't buy any cheap copies.

I'm sorry but i can't enable a such parameter, my RPi is shutting down before i'm able to do so.

4.8V is OK, but you need at least 3A of wattage. Have a look at your PSU.

Try the other HDMI port (HDMI-A-1).
The only time I've seen stability issues like you describe is when trying (and failing) to use a 5V phone charger that only provided 1.5-2.0A to an RPi4 board. RPi5 needs a minimum stable 5V/3A from the PSU, and that increases to 5V/5A once you start to attach USB drives and other kinds of peripherals.
