How can I select an other aspect ratio?
My screen has a 16:10 ratio and I can't select that resolution in the screen options.
Must say that I have a Denon receiver in between (hdmi pass through) so maybe he's messing with my output?

Take out the receiver and connect your Kodi box directly with the monitor, and find out.
FYI, Kodi's skin are not 16:10 compatible. The default skin has a 16:9 aspect ration, so playing on a 16:10 will distort the view a bit.

It normally depends on the device (the GPU in use) and what's in the HDMI chain. It's simple to test without the AVR inline.

So then I do have "1920x1200".
But then I have no HMDI sound passthrough. Or is the spdif passthrough exactly the same as the HDMI one?
My Denon AVR-X4200W has no option to change aspect ratio. So this leaves me to a missing part on the screen untill I buy a new TV? Unless pdif passthrough passes the same protocols as HDMI?
Spdif passthrough is not equivalent to hdmi passthrough. Spdif is limited to stereo pcm or compressed 5.1 via dts or ac3. You won't get hd audio like dts-ma, truehd or greater than 2 channel pcm.
Is it that bad running 1080p 16:9? Not sure how distorted that would be in practice.
It's odd. Any decent Intel gpu should be able to display 1920x1200. I have such a monitor here and never had problems with it. Haven't tried it with the very latest LE builds though.
Perhaps you should rename your guisettings.xml temporarily, and reboot so a fresh settings file is created. Something might got stuck along the way. Or use Kodi's video calibration to make the screen smaller to 16:9, but that will give you black bars over and under the displayed video.
It does provide me 1920x1200 if I leave out the Denon tranceiver (and use a HDMI to HMDI to the screen - because I get a lower resolution when using a HDMI to DVI). It's not that bad Nickr, we can leave with it like this untill we buy a new TV in a year or something. Now and then a subtitle fall's off, but that doesn't happen much.
