Web browsing is perhaps best at 1080p, so switching the back & forth the resolution is one option.
Perhaps with bash scripts that are triggered by remapped keys, doing xrandr commands with the right parameters.

LibreELEC uses 2 partitions:
- A system partition formatted as FAT32
- A data partition formatted as EXT4. And EXT4 supports up to a couple of PetaBytes... 8TB shouldn't be a problem AFAICT.
Personally I wouldn't use a 8 TB as a 'system drive' for LibreELEC. Why not install LibreELEC onto a small USB stick and keep the 'data' separately on your 8TB HDD?
UPDATE: I was able to successfully login using the kodi account however root still does not work.
'root' has no outside access by default in a MySQL/MariaDB for obvious reasons.
You can try to alter the Host value into "%" in the 'users' table for the user 'root' , just like with the user 'kodi'.

It is simple: there is no UPnP support for photos in Kodi.
Kodi only provides UPnP support via its video and music libraries. Since there is no photo library, it's not possible to view photos via UPnP.
I suggest you use a more dedicated solution such as MiniDLNA or other UPnP server software.
You may want to clean up your system a bit. Things like the <useddsfanart> tag in your advancedsettings.xml was deprecated in v17 Krypton. References to Frodo and XBMC-names is also a bit 'meh'.
MYSQL: Connected to version 5.5.62-MariaDB is also an old version, which may soon not be supported anymore.

Also activate the system default skin in case of trouble... which is Estuary in Kodi 18. Confluence is now a 3rd party skin.
Is the Youtube add-on uptodate? It does require an API key these days.
I'd keep things as they are, it's much easier to (re) install LibreELEC whenever necessary.
Also you can keep your media files on the HDD, as LibreELEC can easily access them.
How small is the SSD? LibreELEC will run just fine on 8-16GB already.

LibreELEC and modem/routers are low impact devices. The chances of damage during a power outage is quite low.
Your NAS is a different story. Synology should have software and support for certain UPS models.
Using/testing a J5005 m-itx board here with Ubuntu+Kodi, or LibreELEC. You can tell during the more demanding tasks it's only a low-power Pentium machine, but video-wise it should have enough potential. The whole box uses 8-9 Watts when idling, and up to 20 Watts during complex video stuff. If it wasn't for HEVC, I'd still be using a 8-yr old Celeron 1037.
BTW, Intel will be moving the J40xx/41xx and J50xx to EOL per coming October.
