Make sure your drives are error free, and not in some hibernation or other sleep state from Windows. Linux doesn't like that.
Also having all of your drives have their own unique disk/partition label will help.
After that, plug them all in (if possible), make a SSH connection to your LibreELEC box, and run the following commands (hopefully the sprunge.us website still works):

The LibreELEC Settings Add-on has two reset options for a clean start, a Soft Reset and a Hard Reset.
The latter doing a full reformat of the storage partition. I'd suggest starting with the Soft reset.
If you want to save any other files, then first use the Backup tool. Also available in the Settings Add-on.

Faulty or low standard cables can hinder the handshake between ethernet cards. A good cable should have no trouble creating the highest connection possible. You could try to force a gigabit connect, but find a different cable first. Also try different ports on the router/switch.

Okay, in short:
After the big WannaCry worldwide scare (lots of computers were hacked/infected), LibreELEC defaults to Samba/SMB v2, instead of the usual SMBv1 which a lot of OS'es, including non-updated Windows machines, still support.
SMBv2 does not support browsing. Also, SMBv2 will require you on updated Windows machines to have/use a user account that has a password. Then in Kodi you wil have to go the alternative route via "Add a network location..." when browsing via the Kodi GUI for a new video source. Add all credentials and paths, and your (Windows?) 'server' should be accessible.
As a insecure and temporary workaround, you can still enable SMBv1 support in LibreELEC via the Settings Add-on. Again, this is not encouraged or recommended.
I'd mention it in a support request aka bug report to Synology. They have been quite helpful in the past for me, so I'm sure they will be open to your graph problem. 500MB/s on a 'simple' 214 NAS is ludicrous.

One other thing: network browsing in SMBv2 is no longer functional. You will have to manually add a network location as said earlier via the Kodi GUI when adding a video source.
Also, from my experience: avoid upper/lowercase combinations and spaces in folder names. Replace them with _underscores_ or a dash-character. Or use no spaces at all. Example: \\myserver\movies and \\myserver\tvseries
It's very simple: LibreELEC will wipe EVERYTHING on the target device. It's a disk image that will auto-resize LibreELEC 2nd/storage partition to the full remaining disk capacity on the first boot.
If you as a RPi3 novice want to keep a dual boot, I would advice to use multiple SD cards. For now at least. Which OS'es should the dual boot contain anyway?
Changing the root password is to be a part of LibreELEC as of version 9.0.
If you want a different password right now, you can change it in LibreELEC's source code on Github, and create your own build.
During the first setup this morning, I was prompted to install both Rasbian and LibreELEC.
We prefer to use our own setup/image file, and leave Raspbian for what it is. No need to complicate things.
You can use the LibreELEC USB-SD Creator to make the LibreELEC setup on your RPi micro sd-card.
The RPi2 file is for both the RPi2 and RPi3 models. They use the same image file.
