Same behavior with other TV/monitor?
BTW, what display adapter do You have?

Just a friendly hint:

... a good starting point!
Have You tried with different TV and/or monitor?
If Your TV has different HDMI modes (I.e.: PC, Game Console,...) have You tried different modes?
It sounds like Your NUC is switching to unsupported resolution or frequency.
(Any setting in BIOS?)
Just thoughts...
I'm using Rii i7 mini's as well and yes, there are few scenarios where the only way back is to enable mouse cursor and click close to top-left (depending on where You are stuck of course) to get back to main menu.
A bit annoying but I haven't found a way to make home or back buttons to working in those cases...
Maybe someone knows... A big thanks in advance in that case!
Ohhh... sry... Didn't see that You had a fresh install.
Ignore what I wrote regarding workgroup...
There is a updated "samba.conf.sample" that should be used as base for samba.conf.
Rename existing samba.conf to samba.bak (or whatever else...)
Rename samba.conf.sample to samba.conf
Edit samba.conf, add Your shares, restart.
That should make it work...
Did You try renaming/removing of samba.conf and adding Your shares to the new samba template including workgroup name?
That 'should' help...
Did You read the !!! SAMBA / SMB CHANGES !!! On LE blog page?
Following that solves many issues related to SMB/CIFS...
You could try the Kodi add-on 'Backup' ;
Backup | Kodi | Open Source Home Theater Software
It's pretty self-explaining...
Yes, You can install from USB to HDD (internal drive, eMMC,...).
Note:
Installer will wipe the entire target drive!
Well... Sometimes it's as easy as that!
1. Does power saving settings have any effect at all? (change time, ...)
2. Please provide system logs: https://wiki.libreelec.tv/how_to/provide_logfile?s[]=log
TBH I didn't even think about that...
I just inserted the LE USB and selected install.
Installation went without any issues and after removing the USB everything (as far as I've seen at least) is working fine.
The box has been restarted numerous times after install.
I would stay away from them cheap atom boxes. These are the so called "cherry trail" intel cpu's, and have given me a fair amount of headache. These are often shipped with 32bit uefi firmware. So altough the cpu has nice specs and has native 64bit support, because of the 32bit uefi, you will never likely to be able to boot 64bit LE , or other software. There are various attempts made, but nothing really ever was there to stay. I got rid of all 32bit uefi hardware; in the end wasnt worth the misery. These boxes normally run 32bit windows (10).
Well, in this case I'm a bit surprised myself...
This box (this one called "Bben Mn11") is running LibreElec 8.11 (LibreELEC-Generic.x86_64-8.1.1) just great!
Installed without any bigger hassle to internal (eMMC) drive.
Menus and playback are smooth as they should be (and very close to the 2 Apollo Lake "NUC's" in house) and it does it's job with flying colours.
It's connected to a 50" full HD Samsung and so far absolutely nothing to complain, especially as I only paid approx 55EUR for it.
(List price at AliExpress approx 100EUR)
So from my point absolutely nothing to complain about!
OK, thanks!
That makes sense.
Doesn't it happen automatically?
You mean Kodi stops before restart?
Yes it does but sometimes it makes sense to stop active services/programs in a controlled way before restart.
