How did you manage that? The RPi3 has a HDMI port, the RPi4 has a micro-HDMI port.
Perhaps your adapter cable is having a compatibility issue?

It's kinda important that you know exactly what to expect from a computer AND its operating system.
So what other plans do you have in mind?
1) Linux supports various audio methods. As long as your soundbar is not too "exotic", things should work(tm).
2) LibreELEC can be used in multiple boot environments. I have a PC that multi-boots into Win10/Ubuntu/2xLibreELEC/other stuff. The Linux grub bootloader works best for me. Keeping OS'es on separate drives (SSDs) is best IMO because of making full disk images (e.g. Clonezilla).

So which part of the term "Just enough OS" convinced you that there would (or should) be RAID support in LibreELEC?
LibreELEC / Kodi is a CLIENT application, and we have no intention of picking up loads of baggage to support whatever RAID you prefer. Can you already hear the complaints when users start to lose their data because somehow LibreELEC f**'d up? We're certainly not going to pick up that challenge.
If you want RAID, build yourself a dedicated file server or get a ready-to-go NAS, and have Kodi/LibreELEC connect to it.
When I am downloading films with e.g. Covenant, there is a popup that displays the whole link to the NAS storage including the password.
Kodi does not have download functionality. Thus whatever popup you get to see, it must be from the Covenant itself. Therefore it is not a Kodi or LibreELEC problem.
Moreover, LibreELEC and Kodi have no plans in solving problems from add-ons that facilitate video piracy.
I suggest you ask for support with your Covenant friends for solving your issue.

Not many media players (if any) know what happened when you suddenly yank out the power cable.
Kodi too does not keep track of played files that way.

That is a prehistoric and deprecated option.
The SSH enable option comes in during the 'Welcome wizard'.

You can downgrade LibreELEC the same as an upgrade, simply by placing the correct .tar file in the .update folder.
Reboot and it should work.

I'm curious as to which previous version of LibreELEC you had that supposedly supported dpkg packaging.
Because no version of LibreELEC (or OpenELEC for that matter) ever had debian based packaging.
Perhaps you are confusing Raspbian with LibreELEC, as Raspbian is a full OS.
LibreELEC 9.2.1 will be just around the corner.
Try that version first. Provide a kodi.log when the new version still has problems.

LibreELEC "shell"..? That's a new one.
Audio output can be selected via the Settings / System / Audio / Audio Output Device option. All audio options should be there.
If not, provide a full, debug-enabled kodi.log file.
