Nightly builds can have issues, they are like Alpha versions. Stuff breaks.

What files are you sharing? Kitchen recipes, shopping lists, agendas?
"No movies and other things" while needing to use LibreELEC sounds a bit strange.
Just install Raspberry Pi OS Buster or Ubuntu 20.10, and you can install transmission in a heartbeat.

Try renaming the .kodi folder, and reboot with 18.9.

Downgrade goes the same way as upgrade, put the .tar or .img.gz file in the .update folder.
Be advised that Kodi (add-on) settings are not very "backwards compatibility-friendly"...

Just a tip... A RPi-4B can also run Ubuntu Server or Raspberry Pi OS, on which you can install MariaDB or MySQL server. This will also enable you to have Kodi synchronize metadata as well as watched states / resume points. But if Plex is your choice of weapon, I'm sure that will also work.
I would however use the RPi4's option to boot from USB. If you attach a SSD via a USB30/SATA adapter, you will not only have better data stability (TRIM support), but also much faster write speeds. SDcards are notoriously slow at writing files.

No, it hasn't. I think you are misinformed. There are releases being tested within the team at this moment, and there are the nightly builds which are publicly available. LE 10 final still has no ETA or release date.

The latter. It 'zips' the main folders in the storage partiiton (.kodi, .config, etcetera) into one file. As the system partition is readonly, restoring files isn't really an option.

Is the "Wait for network" option in the Settings Add-on enabled to say 30 seconds?

Start enabling the "Wait for network" option in the LibreELEC Settings addon, it should ensure a proper network connection. Set the timeout to 30 seconds, which should be enough for a RPi device.

LibreELEC has a SMB server onboard for media file serving as well as file maintenance. An built-in NFS Server will not be packaged by default to keep the overall size as nimble as possible. But perhaps you can install one via Docker support when working with only 1 Raspberry Pi device.
Kodi is deemed to be a client application only, an NFS server is IMHO best installed on a full OS on a separate RPi-4, such as Ubuntu Server or Raspberry Pi OS itself.

Weird... NFS has never failed me that way during 10+ years XBMC/Kodi use.

Yes. However, it will be up to the already installed add-ons whether there are updated versions available with Python 3 support. If not, then those add-ons will be disabled.

How much room is currently available on your storage partition, because 16GB should be enough in most cases.
