As far as I can find out, the GT1030 gets it support as per NVIDIA 381.22 Linux driver, and LibreELEC is not there yet. We got stuck to 375.xx because of suspend issues.
Perhaps we can have another try with a driver bump with the release of LE 8.2. An ETA of that release is unknown at this time.
We test and use LibreELEC with a clean setup, and installing skins is not an issue.
So perhaps in your case something else is getting is the way.
Get us a kodi.log file to see your LE box' internals.
Is there another way to debug this other than manually install one addon at a time?
Unless someone has a better idea, no. The RPi build is one of the most stable (if not the most stable) build of LibreELEC. And apparrently something on your box(es) is upsetting that balance. I'm not a developer myself so I cannot do much with the crashlog, but taking babysteps should find out where the weakest link is.
From my personal point of view:
Even minimal addons can produce problems in the end. The fact that those problems occur "only" every 3-4 times a week says to me that those add-ons you installed are still not 100% blast proof. This, comparing with my own RPi, which is running longer, yet not with your addons but with different addons.
So... One option is to do a fresh setup, and install the addons one at a time, and see if they cause problems. If not, install the next addon. And so on.
It's a bit like the way Google displays things. It's a way of saying there are more icons to find next to them.

Overscan is not the problem here. Also, you are comparing the Estuary v2 skin to the initial Estuary v1 skin. The 'look' in Estuary v2 is as intended.
If you prefer the v1 version, you can download theEstuaryMOD skin, which is still based on the v1 version (which is now already discontinued for Kodi 17 I see

Just wondering... It probably has no different outcome, but all I see is upgrades/downgrades being done. Since you do have a backup, try installing LibreELEC 8.0.2 fully fresh and see what happens. Stranger things have happened.
There were problems at first with upgrading the MyAddons27.db file causing Kodi to get stuck during booting.
Make backups from the RPi1 via the built-in tool, install LE fresh on the Rpi3 and restore the backups.

Content list views can be altered to some degree, but not Kodi's own menu GUI.
If you want a different view alltogether, try one of the other Kodi skins that are available.
Perhaps the hardware is okay, but your videos / streams (..?) are the problem.

I'm sorry for your loss. But giving support on 'fully loaded' boxes is similar to 'when hell freezes over': it's never gonna happen.

The only 'moderation' is that messages from new posters have to be approved by admins/moderators as part of spam detection/prevention. That system on our new forum still needs to be tweaked for more optimization .
Messages themselves have not been altered in your case, as far as I can tell.
How is your router configured? Does it use DHCP or did you set up static addresses for your devices?
Usually a 169.* IP means the DHCP server is not handing out addresses, or the device is not receiving any.
