Something must have changed... Is the option "Wait for network" still enabled? Set it to a higher level (30 seconds or so) and reboot.

Double-check for any possible hard disk errors, that is usually the reason that Linux will not mount a hard disk. Also verify that it is not in a mode of suspend or hibernate. Put it in a Windows PC and shut it down properly. Then remount it in the LibreELEC machine.

I suggest getting a Raspberry Pi 3B+ instead. Smaller, quieter, better graphics support.

Well, it's an interesting problem. But so far we have no idea of which hardware you are using, and which video card (if applicable). For now, I'm guessing you have a small/partial Kodi display on to a full TV screen. (Screenshots are welcome).

That almost sounds like WiDi - Wireless Display, but that is something entirely different.
I don't think there is such a solution at the moment for displaying a screen towards Kodi. Also because Chromecast and Miracast are proprietary solutions, which is beyond the scope for Kodi.,

It is possible, there should be a VNC addon available somewhere.
Just don't expect the same video snappiness of the Kodi client on your own PC screen.

I hate to be a party pooper, and I also don't know why some devs haven't seen this yet (I'm not a dev myself), but it is recommended to enable debugging, either via the Kodi GUI or via the advancedsettings.xml file. It will give more detailed info which could help in solving the problem.
So: enable the debugging, restart Kodi, reproduce the problem, and send in the new Kodi log file. Thanks.

It's not your first problem, it's your first "mistake". LibreELEC uses a read-only operating system for a reason.
Kodi supports NFS internally, so you can create a video source via Videos / Files / Add videos / Browse ... / Network File System (NFS). Then you should see your NFS share.
Should that not work for some reason, then an OS mount to your NFS share is possible via the /storage/.config folder. Try the internal method first.

So how do I scan media files to MiniDLNA Library using LibreELEC menu?
That sounds like a great chicken-and-egg situation...
MiniDLNA is to work independently from Kodi as a file server. You could create OS mounts for your media files for MiniDLNA to use.
Kodi should scan/scrape sources that use SMB, NFS or any other of the file protocols. UPnP/DLNA is not one of them.
