Your OE box shouldn't update to LE without you doing it manually.

The kodi experience should be very similar, although I think LE has some patches to kodi.
LE is a more integrated approach, you'll never see a desktop and you boot directly to kodi.
ubuntu has the ability to install anything in the ubuntu (or ubuntu friendly) repos, open a desktop, etc, but then again with docker LE has a lot more abilities to install other software too.
Clearly we are all here because we like LE. Therefore I may be biased, but I prefer LE for a purely kodi machine.

Edit: I see it was you I bumped to the bin when you posted the same on kodi forums. More of the same will result in a ban.

The YouTube addon does not require you to log in to YouTube on your kodi machine. Just log in to youtube on any old computer and follow the instructions on the kodi machine.

Further to the above, bought a harmony eite when one came up cheap on ebay. It has a central hub which can send out Bluetooth, IR and IP commands (it connects to your LAN via wifi).
The remote is RF to the hub, so the hub can be inside the cupboard with the amp which is IR controllable. So, controls my chromebox via bluetooth. Controls the TV and AMP via IR. Controls my Philips Hue lights via IP. Plus if I lose the RF remote I can use an android app on my phone to control the whol lot.
I can turn the AMP and TV on with one press, the chromebox just runs 24/7.
Some of the expected kodi commands don't work, I need to diagnose and maybe change some keymaps, shouldn't be a problem.

No it is not safe to just switch it off. Kodi writes all the time, you can't run it completely read only.
