I just had a look at my log, and it also has "Bluetooth Audio" without Bluetooth enabled. So that's fine.
I still don't understand the /dev/serial1 entry. It appears right after an Ethernet error. Can you do a test with disabled Ethernet?
How can I roll back to v10.0.0? I don't see that as an option in Downloads?
You probably need the MPD add-on to stream DSD / MQA to the DAC. Read here: Click!

So I suggest to stay with LE 10.0.0, until libcec is fixed.

Right, this could be a bug. Before I'll ping the dev's, please provide another log, because your first log is at log level 0.
I don't see anything about sending A/V signals over HDMI.
It seems like the Kodi screensaver activates the TV over CEC.
Test these workarounds:
RPi picture is often too dark / bright, compared to TV channels. Use a different picture blending mode for HDMI input, which is part of your TV settings. Works fine for me.

PS: GPIO layout is different for your hardware - connect the power button correctly.
Hello and thanks for all the tip here. Just one thought, can i change dtoverlay=gpio-shutdown to dtoverlay=gpio-reboot if i just want to get the pi out from halt and just reboot?
Sure. First try without keyboard.xml. If you get a menu screen instead of instant reboot, use keyboard.xml, and replace shutdown by reboot.
PS: Be sure to test new hardware with a stable LE version. If you test hardware with nightly / alpha builds, you'll have trouble to identify mismatches.

Go back to the latest stable version, and report.
Please check the RPi PSU for enough wattage, or use a separately powered USB hub. Also have a look at the logs. Generally be analytic before sending stuff back.

We have success stories for other USB sound cards, but a 6-channel one is new to me. So yes, other RPi forums are a good idea.
Use a fast, blue USB port for the USB sound card. If the issue persists, post a log.
