I'm running last nightly (nightly-20220429-2e7f384)
LE crashes when watching a tv channel, hit "I" for info and afterwards another key apart "I"
the first times it restarts just LE and after some more the box reboots into "safe mode"
reproduce:
1. switch to a tv channel
2. hit "I" for info
3. hit another key apart "I", e.g. "u"

I see crash logs since ~2 weeks by just rebooting.
is it just me ?
Questions:
1. is it a "buildin feature" that the box reboots into "safe mode" after a fixed (?) number of LE crashes ?
2. does the directory ~/logfiles/ only gets filled when a "safe mode"-reboot is triggered ?
So which version of libreelec do you have running on your nuc11?
I guess it's something starting with kernel 5.15 and above, which is in nightly or a homebrewed test build (as a developer)
cause no support for the NUC10/11 GPU's without kernel 5.15 (AFAIK) and above
do you mean:
Settings => Interface => Skin => "-configure skins" => Enable category widgets

Settings => PVR & Live TV are some more settings regarding recording, etc

- you need a running windows 10 [2]
- I suggest to install a least the chipset and the GPU driver from the Intel page
- and maybe both (x86, x64) Visual Studio packages from here:

I would suggest the FW update.
even if it won't fix your current problem, you could exclude future problems regarding HDMI, when the FW is current.
in short: Intel wouldn't release a update when it isn't needed !

where I tend to what's in the NUC data sheet binds more (in my opinion), but it could be a copy/paste mistake by the data sheet author...
anyway, two way to go:
- try with display port (via sorta DP-HDMI-Adapter)
- exchange the NUC (and before buying: investigate the data sheets to make sure what you'll get)

- I currently don't know if one is able to install a OS at your own on pre-build NAS -
but if not, I would never go for a NAS with a vendor OS, cause when the vendor decides to stop support (e.g. pushing newer hardware) you're pissed.
I'm waiting that the prices getting "normal" for this device (a investment for longer than 5 years):
HPE ProLiant MicroServer Gen10 Plus (currently: ~500 €; normal: 100 € lesser)
- with Pentium Gold G5420 and the option to exchange the CPU with Intel Core i3-9100F by time (normal: ~65 €)
- ILO (remote admin, ~50 € extra)
disadvantages:
- maybe the need to setup all the NAS features at your own, but under a OS of your choice, or TrueNAS (ZFS !) or similar NAS-OS's
- maybe the "HP limited" disk size (4x max. 4 TB ?! [ I've read that it's not fixed, see [1]])
- wattage
