Not all remotes are 100% compatible with Libreelec. You may have to modify some code in order for it to work normally. I can't help you with that.
-
Make and Model Number of your remote might be helpful
-
RPi4 + LE = remote works normally
NUC + LE = remote issues
The NUC + LE combo requires a different remote than what you're using because the version of LE used for the NUC is not the same as the version for the RPi4.
Understand?
Ask for assistance to modify your version of LE or use a compatible remote.

LE does not support every piece of hardware on this planet. Apparently, your remote control or infrared receiver is the cause of this issue. I have been using LE with the exact same NUC for years with no problems and use hardware which does work properly.
Your issue will not fix itself. You can modify the software (LE) for your particular remote and receiver or buy compatible hardware. That's your choice.

Are you using an Argon One Case? That reverses the hdmi ports

You might get better help over at the Kodi / YouTube Addon Forum page. Your problem sounds similar to others reported there. Some of those started working again after a day or two without doing anything. Good Luck

The NUC is a DC53427HYE, which does not have an IR sensor built in. An external USB IR Receiver must be used and not all are compatible with Kodi/LE - at least that's what I read some time ago.

I have the exact same model NUC. I have been using it with LE for years. There have been no issues with remote operation. My Infrared Receiver is an HP 5188-1667 that I purchased for under $10 from ebay.
I suspect your problem is the IR Receiver you use or the remote.
If you want to buy the IR Receiver I mentioned, there's one for sale on Ebay now for $1 plus $5 shipping (used). Search for:
HP Media Center Transmitter OVU400103/00 and scroll down the page to find it.

You should also try older versions of LE. The newer versions may have introduced something that is affecting your setup.

I'm running LE on an Intel NUC and have no issues with turning my NUC on and off with a Harmony 665 Universal Remote. I use sleep mode on my really old NUC though. It might help if you include your NUC Model number and the versions of LE that you tried. Start with older versions of LE (9.2.8 maybe).

Not enough information -
What hdmi jack on the rpi ?

Your hardware - AVR, TV ?
HDMI connectivity ? (re: rpi to avr to tv)
Are there any GUI sounds or is your problem only related to these addons ?

Sony Vaio Recovery is located in a hidden Recovery partition of the hard drive. I guess you have to remove that partition before formatting the drive and installing Libreelec.

It might be time to try again. Before connecting to the VPN, you must select a region that is not geo blocked. You might also want to get support from botallen on their website. You will find a support link at the top of the main page
