Hi all,
My i5 NUC has 8G of ram. Is it recommended for my system to setup and use a swap partition? The M.2 SSD is 120G, so plenty of space left after the 250M LE install 
Or is swap not needed with LE?

Not needed at all. I have 4G and no swap.

even with 1gb RAM you need no swap

With a few addons installed I'd say you definitely need swap with 1GB.
