Yesterday a team user tried the exact same way like explained in the wiki I linked you to. He doesn´t use a xorg.conf and it works perfectly for him So, either you made something wrong, or you have a very special case. I´ll be a bit busy today, so I can´t test myself. But I will do over the weekend and then migrate that how-to to our Wiki and let you know how far I got.
AFAIK the DVBSky S960 is supported

Where did you place the edid.cpio file in the end?
If I see the xorg.conf you created it seems to be in /storage/.config/firmware/edid/edid.bin which is wrong as it needs to be in /flash in the end. See:

restart kodi
ssh in (username: root - password: libreelec)

The quetion might be if the backupped zip (IIRC it is a zip file) contains something or not and if yes, what does it contain? If it doesn't contain anything then it might be easier to find out where the issue is. If it contains the correct files, then it's not the backup which fails, but then it's the restore.

As a guess I would say that Amlogic devices don't use a video-range from 0-255. Instead I would guess it uses 16-235 which might be a reason.

Nothing to add anymore to the above, just that it doesn´t matter how large the libraries are. It´s possible on any system and none does provide a pro or a con for it. Youtube is possible via the Youtube addon.

That´s not a real problem. If it works before with OpenELEC it was kind of luck. Probably the boot process is a bit different now with LibreELEC, which might cause, that the HDMI handshake is done earlier with LibreELEC and the TV doesn´t provide the EDIDs yet. Therefore the NUC doesn´t get the EDID informations and you will get no screen.
To avoid that, you either have to turn on the TV before or dump the EDID like explained in this OpenELEC wiki:
Configuring a Custom xorg.conf - OpenELEC
Take a look at "Custom EDID" at the link above. After doing this you don´t have to wait anymore until your TV is up.
The question might also be, what do you need it for?
Do you have an AVR with HDMI inputs and are you able to listen to HD-audio formats like DTS-HDMA or DolbyTrueHD? If yes to all, then some S905 devices might be the better choice, because the RPi is only able to do DolbyDigital or DTS and it´s not able to passthrough HD-audio formats.
So we need a bit more information about your usecase to give a better answer.
