but the gui suggests there are no seasons/episodes.
Video files are not automatically placed in the Kodi video database.
Apparently you have not properly scraped the "shared" video source yet.
Perhaps the kodi.log file will enlighten us more.
It's not unusual for skins to be fixed or upgraded until the new final version of a Kodi release is out.
So I'm guessing you will need to have a bit more patience for now.
The only way seems to install rasp-Os and then Kodi??? I cannot believe it!!!

We are focused on displaying videos correctly, surfing the web is not our biggest objective.

In short: all HDR is still a work-in-progress, and Kodi is still in Alpha state.
Kodi itself has been a HTPC solution first and foremost. Applications like text editors have never really come into the picture. So with LibreELEC, a most minimal shell for Kodi, such "office-like" extensions haven never been considered.
Recently Docker support has been implement so more flexibility in apps is possible, but an actual text editor within Kodi itself has yet to be developed. Using a full-blown OS with its usual perks would make much more sense there.

Kodi 18.9 is to be released first (no ETA known yet), I'm guessing the next LE version will contain that. Whether the Linux kernel will be bumped, I have no idea (I'm not a LE/Kodi dev).
RPi4's firmware and USB3 driverset have been updated as per September. Perhaps that will help you a bit.
I just tested Ubuntu 20.10 on a RPi-4B 4GB and a SSD via a USB3.0-SATA cable. Things went relatively smooth. It's no real PC of course, but it felt snappy. I'll have another go with LibreELEC 9.2.5 later on.
Make sure to have the "Wait for network" option enabled in the LibreELEC Settings Add-on network section.
If the TV shows different refresh rates, then basically all is working.
Stuttering is a broad term: it can be micro stutters that happen once a minute, or big stutters every second, and everything in between.

I have everything activated on the LibreElec about changing the refresh rate automatically but I don't see any changes on my screen.
You have some "Screen information" type of option on your TV, so you can see what resolution and refresh rate is active at that moment?
EXT4 should not be a problem as it is basically Linux' default disk format.
Have you check for disk errors, as that is one thing that might prevent Linux from writing data to your disk.

Basically yes, although some network configuration will always be unique, such as IP and MAC addresses, and SSH keys.
I would like to update just one Pi then backup the file and restore it on other raspberry pi's.
How often are you planning to "update" a Raspberry Pi? If you are referring to Kodi's video and/or music library, the use of a centralized MySQL/MariaDB would be a much better solution.
All the external hdd's are labeled the same.
That is often not a very good idea, at Linux likes to tell the different disks apart. Having identical disk labels could confuse the Linux OS or Kodi.

Everyone's situation is different of course, but for starters, a NAS doesn't have to be in the same room with you. As long as you can place it "somewhere out of the way" with access to a network cable and a power outlet, you could even place it in an addict or in a basement.
Is the high noise from the drives or from its fan(s)? You could try to replace them with fans that have a slower, less noisy rpm setting.
I said 'typically', but if for whatever reason it's useless for you to keep the NAS on, by all means, turn on it only when you need it. Simply make sure that Kodi doesn't need it at that moment.
