You could try, play a movie, press OK to see the menu, go to settings, Audio settings, Audio offset
-
I have the same device, I have not had any problems, with this or the previous version I have now disconnected it. But you could try changing the synch settings.

Perhaps you can find which bios version doesn’t have the issue
Although installing previous versions is not supported
-
Google & you will find there are problems with the IR on some NUCS
-
I don't have your system, I do not know much about logs.
But, in case no one answers you.
On my Intel nuc, I see my Onkyo listed under audio. But you don't see your amp?
Try different hdmi cable?
When you select hdmi, do you select passthrough?
Not ideal, but you can quickly convert mp4 to mkv using mkvtoolnix

you might find some ideas Netflix Add-on [input-stream]
I think you need InputStream Adaptive and RTMP

Not sure if this is for you. I ran Libreelec from a usb drive on my intel nuc. If you want to go back to windows remove the usb stick.
I know you said that VM won't boot from usb, but does the pc bios support boot from usb?

I don't think there are official images for S912. I think there are unofficial images of S905
If Boot to ELEC doesn't work. Try details?id=jackpal.androidterm then type reboot update? (I think)

For a start to Mecool is an amlogic device, not generic.
Another thing is? how to you press the reset button to get it to boot the usb?
My mecool M8Pro plus doesn't have reset button,so I had to download an android app to get it to boot into recovery
But, if I were you I would head over to the Coreelec forum download the image for your device

Personally, I think intel pc's are a good bet.

just to give you a few more ideas

My suggestion would be to go to the coreelec download page, select new installation, then select your device from the list. The device tree that is written should be correct, if not, you will see the device trees folder.
If it doesn't boot, select a device tree based on your LAN & RAM
-
It shouldn't be necessary. I don't know about libreelec builds for this, but when you burn coreelec images, there is a folder with several device trees
You can choose a device tree based on the LAN & RAM size

do a backup, save it elsewhere, then try a fresh install
-
Not what you want to hear, install, wipe whole disk, use gparted to partition the storage partition, & copy back the movies

I use coreftp lite, from a win 10 pc, to access my files on my devices
