I think your AVR doesnt have the ability to passthrough HDR UHD files, but only SDR files.
Try to connect your beelink directly to your TV and not through your AVR and check the results.
If everything is fine, then you'll know your AVR is your issue.

Same resolution issue in 4K with the latest version. (Beelink GT1 ultimate)
It even happens on the GUI if set to 4K.
Went back to 8.2.2.3 as advised and all is OK now

Have you tried this device tree ?
You'll get only 2gb instead of 3gb in Libreelec but everything works fine from my side, included the USB ports
