I have Minix Neo U1 too and no freezes. Try to reinstall the build or replace the SD card.
Turn on the waiting for network under LibreELEC/Network menu in Settings.

I have freezes at boot time one out of three (etheir on libreelec logo or kodi logo) with version 8.02a.
I had the same problem with 8.01l cec enabled.
All ok with 8.01k or 8.0l cec turned off.
There is another small problem: libreelec doesn't take time from rtc.

Known issues:
- Built-in DVB tuners are not supported.
- Supported internal WiFi chips: Broadcom (all), Realtek (all) and Qualcomm QCA9377. Other chips, e.g. 9082xs are not supported because manufacturers show middle finger on every driver request.
- 4K support is experimental.
- 3D and HDR are not supported, i.e. they might work but I don't provide support.
- CEC might not work when your box has incompatible u-boot or your TV is not that well supported by Amlogic low-level CEC driver.
- External DVB tuner support is experimental via media_build drivers from CrazyCat69.

Nfs speed is still limited to 12 Mb/s 13MB/s on my wetek hub with 8.0.1k-rc2 release so jellyfish-120-mbps-4k-uhd-hevc-10bit.mkv can't play smoothly.
