Time zone setting on generic.x86_64

Sorry is this has been asked before, how the heck do you set/change the timezone (I am running the x86 build)

I know how to set it up on the raspberry Pi (done that several times before)

Every search on google refers back to the Pi

But this x86 build has me stumped.

It is set for the Central Time zone and I am in the Eastern New York time zone

Any assistance would be most appreciated.
